Spicy Pot Roast

If you're tired of the same old recipe for a roast try this variation that my Grandmother makes.  We call it "Spicy Pot Roast"
 
3lbs boneless chuck roast
1/4 cup cooking oil
1tsp salt
1/4 cup wine vinegar
1/4 cup catsup
2tbsp Worcestershire sauce
2tbsp soy sauce
1tsp dried rosemary
1/2tsp garlic powder
1/2tsp dry mustard
 
Slowly brown roast in hot oil in skillet.  Sprinkle with salt.  Combine other ingredients and pour over meat.  Cover tightly and simmer 2 hours.  Add one can of sliced white potatoes and one can of sliced carrots and simmer an additional 15 minutes.  Remove to platter.  Cook white rice and spoon the gravy from the meat over rice.  Serves 8.  Delicious!  (I also like a little horseradish on the side.)  This recipe is best simmered in a crock pot.
