Broccoli w/ Mornay Sauce web posted August 28, 2006 Ingredients: 1 bunch (about 1-1/2 lbs.) broccoli , cut into 2-inch flowerettes 1/2 cup finely chopped green onion 2 tbsp. butter or margarine 3 tbsp. all-purpose flour 2 cups milk 1/4 cup grated Swiss cheese 1/2 tsp. salt. 1/4 tsp. white pepper Dash of nutmeg 1/4 cup grated Parmesan cheese 1/4 cup fine, dry white bread crumbs 2 tbsp. melted butter or margarine Cook broccoli in boiling salted water for 5 mins. or until almost tender.Refresh under cold water. Drain well. In med. sauce pan, saute onion in butter for 3 mins. Add flour. Stir constantly over low heat for 1 min. Add milk, whisking constantly. Cook over med.-high heat, whisking constantly,for 5 mins. Mixture will thicken. Stir in Swiss cheese, salt, pepper and nutmeg. Coat bottom of 1 to 1-1/2 qrt. casserole dish with sauce. Arrange broccoli over sauce. Pour remaining sauce over broccoli. Combine Parmesan cheese and bread crumbs. Sprinkle over casserole. Drizzle with melted butter. Bake, uncovered, at 375 degrees for 20 to 25 mins. or until lightly browned. Makes 4 to 5 servings. For
