She Crab Soup web posted Sepember 3, 2006 Ingredients: 1 med. onion, chopped 3 tbsp. butter 2 tsp. flour 1 qrt. whole milk 1 lb. (2 cups) flaked, white crab meat 1/4 lb. crab roe 1/2 tsp. white pepper 1/8 tsp. ground mace 1 pint milk 1/2 cup sherry Saute onion in half the butter, over low heat. Melt rest of butter in top of double boiler and blend in flour. Stir in onion and add 1 qrt. milk, stirring constantly. Add crab meat and roe and stir well. Add pepper and mace. Cook slowly for 20 mins. Add pint of milk and stir well. Remove from heat and add sherry. Serve in soup bowls which have been heated. Top with a dollop of cream , and garnish with parsley sprigs or a sprinkle of paprika. Serve with crackers. Yields 6 to 8 servings. For
