Grandma's Butter Beans

3 Cups of small fresh Butter Beans
2 Tblsp of butter
1 strip of fat back

Place a slice of fat back in a small skillet and cook over a med-high heat. When it begins to fry turn once. Lightly brown other side and remove from stove. Put 3 cups of fresh small Butter Beans in a pot with enough water to cover the beans and bring to a boil. Add butter and continue to boil until butter is melted.

Once butter is melted reduce the heat and add the fatback and the drippings. Cover the pot and continue to cook on a low heat for at least one hour. Stir every few minutes and add water as needed. Keep water level over the top of beans.

That's the way my Grandma made them and how she taught me to make them. I hope you enjoy the recipe.
