![]() Chicken-Fried Steak web posted October 30, 2006 Ingredients: 4 med. sized pieces boneless, beef cubed steak 3/4 cup fine dry bread crumbs 1/2 tsp.dried basil or oregano, crushed 1/2 tsp. salt 1/2 tsp. black pepper 1 egg, beaten 1 tbsp. mik 2 tbsp. cooking oil 1 small onion, sliced and separated into rings 2 tbsp. all-purpose flour 1-1/3 cup milk Salt and Black Pepper In a shallow dish or on wax paper, combine bread cumbs, basil, the 1/2 tsp. salt. the 1/2 tsp. pepper. In another shallow dish, combine egg and the 1 tbsp. milk. Dip meat pieces into egg mixture. Then coat with the bread crumb mixture. In a 12-inch skillet, cook meat, half at a time, in hot oil, over med. heat, about 6 mins. or until brown, turning once. (Add more oil, if necessary). Return all meat to skillet. Reduce heat to med.-low. Cover and cook for 45 to 60 mins. more or until meat is tender. Transfer meat to a serving platter, reserving drippings in skillet, keep warm. For Gravy: Cook onion in reserved drippings until tender but not browned. Add more oil, if necessary. Stir in flour. Gradually stir in the 1-1/3 cups milk. Cook and stir over med. heat until thick and bubbly. Cook and stir for 1 min. more. If desired, season to taste with additional salt and pepper. Serve gravy with meat. Yields 4 servings. For
