Fried Salmon Patties

Ingredients:

1 can (16 ozs.) pink salmon, drained
1 tsp. salt
1/2 tsp. black pepper
2 lrg. eggs
1/4 cup all-purpose flour
1/2 cup shortening
1/4 cup finely chopped red bell pepper

Place salmon in a mixing bowl. Remove skin and bones. Separate into flakes and mash into small pieces. Add salt, pepper, eggs, flour and bell pepper. Mix until blended. You will need to fry two batches using half of the mixture each time. When forming patties, make them about 2-1/2-inches wide and about 1/2-inch thick. Place shortening in a lrg. heavy skillet over med. heat. When hot place patties in pan and fry 3 to 4 mins. on each side or until golden brown. Remove to paper towels for draining and fry second batch. Makes 10 to 12 patties.
