Lemon London Broil web posted April 30, 2007 Ingredients: 1 beef flank steak, (around 1-1/2 lbs.) 1 tsp. finely shredded lemon peel 1/2 cup lemon juice 2 tbsp. sugar 2 tbsp. soy sauce 2 tsp. snipped fresh oregano or 1/2 tsp. dry oregano, crushed 1/2 tsp. black pepper Trim fat from steak. Score steak on both sides by making shallow cuts at 1-inch intervals in a diamond pattern. Place steak in a plastic bag set in a shallow dish. For marinade, combine lemon peel, lemon juice, sugar, soy sauce, oregano, and pepper. Pour over steak. Seal bag. Marinate in refrigerator for 2 to 24 hours, turning bag occasionally. Drain steak, reserving marinade. For a charcoal grill, grill steak on the rack of an uncovered grill directly over med. coals for 17 to 21 mins. for medium, turning and brushing once with marinade halfway through grilling. For a gas grill, preheat grill. Reduce heat to med. Place steak on grill rack over heat. Cover and grill as above. To serve, thinly slice steak diagonally. Makes 6 servings. For
