Meat Loaf / Potato Surprise web posted May 14, 2007 Ingredients: 1 cup soft bread crumbs 1/2 cup beef broth 1 egg, beaten 4 tsp. dried minced onion 1 tsp. salt 1/4 tsp. Italian seasoning 1/4 tsp. pepper 1-1/2 lbs. ground beef 4 cups frozen, shreddd hashbrowns, thawed 1/3 cup grated Parmesan cheese 1/4 cup minced fresh parsley 1 tsp. onion salt 1 can,(8 ozs.) tomato sauce 2 tsp. mustard Additional Parmesan cheese In a bowl, combine crumbs,1/2 cup broth, egg, and seasonings. Let stand for 2 or 3 mins. Add the beef and mix well. On a piece of wax paper, pat meat mixture into a 10-inch square. Combine hashbrowns, cheese, parsley and onion salt. Mix well and then spoon over meat, evenly. Roll up, jelly-roll style, removing wax paper as you roll up. Pinch edges and ends to seal. Place, with seam side down, in an ungreased shallow baking pan. Bake at 375 degrees for 40 mins. Combine tomato sauce, 1/4 cup beef broth and mustard. Spoon over loaf. Return to oven for 10 mins. Sprinkle with Parmesan cheese before serving. Serves 8. For
