![]() Apple-sweet potato bake web posted June 5, 2006 Ingredients: 1 med. to lrg. sweet potato, peeled and sliced into 1/4 inch pieces 2 lrg.apples, peeled,cored, and cut into 1/4 inch thick wedges 8 oz, diced ham 1/4 cup orange juice mixed with 1 tsp. cornstarch 1/4 cup firmly packed brown sugar 1/4 tsp. cinnamon 1/4 tsp. salt 1 tbsp. butter. Next, igredients for oat topping: 1/4 cup flour 1/2 cup of old-fashioned oats 2 tsp. brown sugar 2 tsp. butter or margarine Preheat oven to 350. Bring a large pot of water to a boil and drop in sweet potato slices. Cook for 15 mins. until tender. Drain well. In a 3 qrt. baking dish begin alternating layers of sweet potatoes, ham and apples. Combine orange juice mixture, brown sugar, cinnamon, salt and butter in a small saucepan over med.-low heat. Heat until butter melts and sugar dissolves. Pour over sweet potato mixture. Prepare oat topping: mix flour, oats, and brown sugar in a bowl. Cut in butter until mixture is crumbly. Sprinkle over sweet potato mixture and bake for 30 mins. or until apples are fork tender, oat topping is browned, and liquid begins to bubble. (serves four.) For
