Chicken Cacciatori web posted June 11, 2007 Ingredients: 2-1/2 to 3 lbs. chicken, cut up Olive oil 1 lrg. green bell pepper, cut into strips 1 lrg. onion, cut into slices 1 can, (15 ozs. ) tomato sauce 1 clove garlic 1/4 tsp. red pepper, optional 1 tsp. salt. 1 tsp. oregano 1/2 tsp. black pepper 1/4 tsp. thyme 1 jar or can, (4 ozs.) mushroom stems and pieces Flour, salt, and pepper chicken pieces, then brown in about 1/2 inch of olive oil for around 20 mins. Add bell pepper and onion and saute in oil. Drain most of oil from skillet. Pour tomato sauce, seasonings and mushrooms over chicken. Salt and pepper to taste. Simmer until chicken is done, about 1 hour. Serves 5. For
