Meatloaf with Sweet Sour Sauce

Ingredients:

2 lbs. ground beef or chuck
1/2 cup finely chopped onion
1/2 cup finely chopped celery
2 cloves garlic, finely chopped
2-1/2 tsps. salt
1 tsp. dry mustard
2 beaten eggs
1/4 cup bell pepper, minced
Cracker crumbs or dry bread crumbs, for filler
1/2 cup tomato sauce
1 cup water
2 tbsp. brown sugar or molasses
2 tbsp. vinegar

Mix lightly, all ingredients, but the last four. Form into a loaf and bake at 325 degrees for 30 mins. While loaf is baking, mix together the last four ingredients to make a sauce. Pour sauce over meatloaf and continue baking for 1-1/2 hour longer. basting occasionally. Serves 6.
