Oven browned red potatoes

Ingredients:
16 to 18 small red potatoes
Olive oil
1 to 2 teaspoons Sea salt (to taste)
1 to 2 teaspoons Fresh ground black pepper (to taste)
1/4 to 1/2 teaspoon Garlic powder (Do not use fresh garlic or garlic salt for this recipe)
2 teaspoons Paprika
1/4 cup Chives (chopped fine)

Wash red potatoes and place into pot of actively boiling water for about 10 minutes. Remove and allow cooling in the pot (do not remove water). Cut potatoes into quarters after cooling. Place potatoes in a shallow baking pan and lightly sprinkle with olive oil. Tip: Best to gently rub the potatoes with the oil by hand to assure an even thin coating. Place potatoes skin side down and wedge point upward and sprinkle with sea salt, ground black pepper, garlic powder, paprika, and chives to taste.

Preheat oven to 450 degrees and place potatoes into oven and cook until golden brown and can be mashed with a fork. Times may vary between 20 to 35 minutes upon the size of potatoes. Remove from oven and allow to cool for at least 5 minutes before serving.

Serves four.
