Shrimp Stuffed Bell Peppers

Ingredients:
2 cps. very stiff instant or homemade mashed potatoes
4 slices bacon
2 lrg. onoins (finely chopped.)
6 bell peppers (cleaned,top cut off and reserved)
3 lbs. cooked, cleaned shrimp,(chopped)
2 tbsp. worcestershire sauce
1/4 tsp. tabasco (more if you like)
1 egg (beaten)
pinch of thyme
salt and pepper to taste
paprika to top off

Preheat oven to 400 degrees. Fry bacon until crisp, remove from pan, crumble and set aside (save drippings). Add chopped bell pepper tops and onion to drippings in pan and saute. Mix mashed potatoes, shrimp, worcestershire sauce, tabasco, thyme, salt and pepper and egg. Stuff prepared bell peppers with mixture and sprinkle with paprika. Place peppers in a shallow baking dish with a small amount of water. Bake until golden brown. (about 30 or 40 mins)
