Sam's Chili

Ingredients:
2 tbsp Criso oil
1 lrg. onion; chopped finely
1 clove garlic; crushed
1-1/2 lbs. chopped stew beef
1 lb. Italian sausage
1 can(14-1/2 ozs) stewed tomatoes
1 can(8 ozs.) tomato sauce
1 can(6 ozs.) tomato paste
1 hot cherry pepper; diced (optional)
1/4 cp. firmly packed dark brown sugar
1 tbsp. chili powder or to taste
1/4 tsp. cayenne pepper (optional)
2 cans (16 oz.) red beans or kidney beans
1 lrg pkg. Kraft extra sharp cheddar cheese
hot cooked rice (optional)

Heat oil in stockpot on med. heat and add onions and garlic. Cook until transparent. Add stew beef and sausage; diced. Cook while stirring, until all meat browns. Stir in tomatoes, tomato sauce, tomato paste, cherry pepper, brown sugar, cayenne and undrained beans. Season with salt and pepper and stir well. Cook on low heat for 45 mins. Serve alone or over rice. Dice cheddar cheese into cubes and place on the side to be added into bowls of chili as desired.
