Roast Tenderloin of Pork W/ Herb Tomato Marinade

Ingredients
2 pork tenderloins; about 1/4 lb. each
1-1/2 cps. olive oil
1/4 cp. apple juice
1 apple;cored and diced
1/2 cp. chopped canned tomatoes
2 tbsp. fresh or 2 tsp. dried basil
2 tbsp. fresh or 2 tsp. dried oregano
2 tsp. fresh or 2 tsp. dried thyme
1 tbsp. black pepper
1 cup white wine
fresh herb sprigs (optional)

Place pork in a large nonmetal container. Combine olive oil, apple juice, apple, tomatoes, basil, oregano, thyme and pepper. Pour over pork. Marinate overnight in refrigerator. Preheat oven to 350. Remove pork from marinade. Sear all sides in an oven-proof skillet. Add marinade and wine to skillet. Cover loosely with foil. Bake at 350 for 30 mins, basting occasionally. Remove foil and bake an additional 15 to 20 mins. or until meat thermometer registers 170F. Remove from oven and let stand 5 mins. before slicing. Add more white wine to skillet, if necessary and reduce to one-half. Strain through cheesecloth then pour over meat. Garnish with fresh herbs, if desired. Makes 4 to 6 servings.-----this is delicious!
