Smothered Cube Steak with Rice & Sauteed Squash & Zucchini

Ingredients:
Pack of Beef or Deer Cube Steak
Onion
White Rice
2 – 3 Small Fresh Squash
2 Small Zucchini
rolls
Wet Ingredients: Worcestershire, Italian Dressing, Oil, Hot Sauce
Dry Ingredients: Garlic Powder, Oregano, Salt, Pepper, Tony Chaterre's
Creole Seasoning, Flour.
For this I like to use either a stainless steel skillet or a cast iron
skillet.
Take your pan and fill it ¼ of the way with oil. You
will know that you have your oil hot enough when you add a little flour
to it and it disappears. Cover the cube steak with hot sauce on
both sides of the meat. Then season the meat with your Dry
Ingredients on both sides. Get a zip lock bag and add the flour
to it. Make sure to season your flour also. When your
grease is right add the meat.
You are not trying to deep fry the meat. Flip the meat over a let
fry. Some of your seasoning is going to stick to the bottom of
the pan and that is a GOOD THING!!! This is what you are going to
make your roux or gravy with. After you have flipped the meat and
cook the other side take the meat out of the grease and sit on a paper
towel and let the access grease drain. Pour the grease out of the
pan. Leave the seasoning on the bottom. Put pan back on the
stove and let it get hot. Add some water to the pan and take your
whisk and get all of those GREAT seasonings off the bottom of the
pan. Add flour in gradually whisking it in.
Also add Worcestershire and more of your dry seasonings.
Your gravy will begin to thicken up. If it gets too thick just add a
little water to thin it out. Add sliced onion. Let simmer
for a few minutes so that your onions can cook a little. Add your
meat back in. Let this simmer checking regularly and stirring as
needed.
Take the squash and zucchini and slice either long ways or in
cubes. Put a little olive oil in the pan. Take the squash
& zucchini and add to the pan. Squirt a little Italian
dressing on them along with a little garlic, salt, pepper, and
oregano. Cook for about 5 minutes or until they are done to your
liking.
As for the rice. Everybody can't cook rice. You can either
go to the Chinese rest. And get an order of white rice or Uncle Ben's
make really good microwave rice. Throw your rolls in the oven and your
done!
